工作內容：1. 在主廚不在的情況下，監督餐飲廚房的運作。 2. 協助主廚制定/調整/設計/開發菜單。 3. 確保菜餚品質和外觀符合標準。 4. 管理庫存和食材採購。 5. 監控及維護廚房設備及清潔衛生。 6. 與其他部門合作，確保顧客滿意。 7. 創作食譜並開發新菜色。 8. 培訓和監督下屬廚師/廚師。 9. 注意廚房設備維護、食品安全、環境衛生工作 10. 督導檢查有關食品進貨、貯存等並保持烹飪材料的適當存量(食材庫存管理) 11. 與餐廳主管討論促銷方案 12. 餐飲訂價、食物成本及出菜品質控管 13. 管理廚房員工包括排班、人員訓練及專業技能培養、營造良好工作氣氛及維持團隊關係 14. 有時在主廚不在的情況下擔任其職務。 15. 確保嚴格遵守所有法定和公司衛生規定。 16. 確保所有維護問題都及時報告並跟進。 17. 確保餐廳和廚房之間的所有溝通順暢。 18. 確保每位廚師都收到正確訂單，並安排到相應的餐桌。 19. 確保每道菜離開廚房後都經過品質、數量、外觀和溫度檢查。 20. 參加簡報會和每月部門主管會議。(參與會議及定期召開廚務會議，針對客人反應及外場員工所提出的問題加以檢討與改進) 21. 完成其他工作相關職責。
