  • 工作內容 麵包主廚負責依照生產排程及宴會活動訂單準備符合品質標準的餐點，並同時保持安全與衛生的工作環境。 1.協助點心主廚管理甜點部門的日常運作，並確保團隊成員遵守酒店所制定的服務標準、部門政策和操作流程。 2.有效地管理麵包店並確實遵守酒店的政策及標準。 3.建立並實行麵包店的績效標準，以在廚房內建立並維持精簡有效的營運模式。 4.檢視各項進貨原料，確保所有商品皆符合訂單表、品質標準與收發記錄。 5.準備並監督日常的準備工作，確保各區域皆依照所預估的營業量準備，以提供新鮮且高品質的烘焙產品。 6.協助點心主廚確保領取烘焙產品時，需附上證明文件，例如主廚需求表單或廚房內轉調單。 7.協助點心主廚推出符合潮流的新產品，並在節日或特殊場合發起獨特的餐點促銷活動，以提高營收。 8.確保同事們皆遵守《食品、健康、衛生和安全手冊》中所規定的健康、衛生和安全準則。 9.掌握個人的成長並參與團隊成員的職涯發展和培育繼任者。 10.能夠執行部門內的所有職務，並在必要時協助輪班。 Chef Baker is responsible for the preparation of bread items according to production schedules and banquet event orders that meet quality standards while maintaining a safe, sanitary work environment. 1. Assists the Pastry chef in the daily operations of the Pastry section and ensures that all team members comply with service standards, departmental policies, and operating procedures set by the hotel. 2. Ensures that the Bakery is managed efficiently and that Company and Hotel Policies & Procedures and Minimum Standards are adhered to. 3. Establishes and implements performance standards for the Bakery to establish and maintain a streamlined and efficient operation within the Bakery Kitchen. 4. Verifies all incoming ingredients, and ensures that all merchandise is by order sheets, quality standards, and receiving records. 5. Prepares and supervises daily mis en place and assures that all sections are ready and supplied with fresh and high-quality products based on anticipated business levels. 6. Assists the Pastry Chef in ensuring that no food items leave the pastry/bakery without documents e.g. chef order or inter–kitchen transfers. 7. Assists the Pastry Chef in coming up with innovative products that are in-trend and initiates special promotion of unique pastries during festivals and special occasions to drive optimal business revenue. 8. Ensures that all colleagues adhere to the Health, Hygiene, and Safety guidelines following the Food, Health, Hygiene, and Safety manuals. 9. Take ownership of the individual’s growth and be involved in career progression and succession planning of team members. 10. Be able to perform all tasks within the department and assist in shift coverage when necessary.
